Open a handful of verified lots on any sourcing platform and the evidence starts to blur together: a cupping score, a processing method, a couple of certifications, an EUDR tier, a region. Each field is doing a specific job. None of them is doing all the jobs at once — and treating a strong reading on one as a stand-in for the others is the most common way a buyer's own screening goes wrong.
This is a walk through what each signal on a verified lot actually says, what it doesn't, and how to read them together instead of picking a favorite number and stopping there.
The problem isn't too little evidence — it's too much, unsorted
A buyer comparing lots across an anonymized catalogue is rarely short on data points. Cupping notes, moisture readings, defect counts, screen sizes, processing method, certifications, an EUDR tier — a single lot page can carry all of it. The friction isn't access. It's that these fields answer different questions, and a buyer under time pressure tends to default to whichever one is easiest to rank on — usually the cupping score — and let it stand in for a purchasing decision it was never built to carry alone.
A cupping score says nothing about deforestation risk. An EUDR tier says nothing about cup quality. A certification speaks to one standard's audit, which may or may not touch the thing a buyer actually cares about for a given order. Reading a verified lot well means keeping each signal in its own lane and asking what it does — and doesn't — underwrite before it feeds into a shortlist.
Cupping score: a sensory summary, not a certificate
Under the Specialty Coffee Association's widely used cupping protocol, a lot that scores 80 or above is generally described as "specialty" — a threshold built from sensory attributes: fragrance and aroma, flavor, aftertaste, acidity, body, balance, and uniformity, scored by a trained cupper against a defined form. It is a real, standardized method, and a score in the specialty range is a meaningful signal about how a lot is likely to taste and perform in a roast.
What it is not: a food-safety clearance, a legality check, or a guarantee that every bag in a shipment cups the same. A score is a snapshot from a sample evaluated by a specific cupper on a specific day. Two lots at the same score can still taste distinguishably different to a second cupper, or perform differently once roasted on a buyer's own profile — that's normal for a sensory method, not a flaw in the number. The practical use of a Kenya coffee cupping score verified on a lot page is as a screening filter — narrow a long list to lots in the range a buyer's program requires — not as the final word on whether a specific bag will perform on a specific roast.
Reading the score in context, not isolation
A score sitting next to processing method and harvest year is more useful than the same score alone, because sensory outcome and processing are linked. A washed lot and a natural-processed lot at the same headline number can present very differently in cup — the washed lot typically reads cleaner and brighter, the natural typically carries more fruit-forward, fermented character. Neither is objectively better; the fit depends on what a buyer's roast program and customer base actually want. The number tells a buyer where a lot sits on a quality scale. The fields around it tell a buyer whether that quality shows up as the flavor profile they're sourcing for.
Moisture content and defect count: the inputs behind the number, not always the headline
Moisture content and defect count are foundational grading inputs in specialty coffee, even where a specific lot page doesn't surface a numeric moisture percentage front and center. Moisture matters because green coffee stored too wet is prone to mold and rapid quality decline in transit and storage; too dry, and a lot can taste flat or papery. The commonly cited target range for stable green coffee storage sits roughly between 9.5% and 12% moisture, with roasters and exporters treating readings well outside that band as a storage or quality flag worth asking about.
Defect count works on a related but separate axis: it's a physical-grading method, most familiar from systems like the New York Board of Trade's classification, where primary defects (full black beans, full sour beans, foreign matter) and secondary defects (partial black, partial sour, broken or immature beans, and similar) are counted against a fixed sample size to produce a grade. A specialty-grade green sample generally allows for very few full defects and a capped count of secondary defects; a lower grade tolerates more. Screen size — the physical bean-size classification, typically expressed as a screen number — is a related but distinct axis again: it describes bean size and uniformity, which affects roast evenness more than it affects cup quality on its own.
The reason to know this vocabulary, even where a lot page doesn't itemize every number: when quality evidence and a cupping score are presented together, moisture and defect grading are usually part of what produced that score and what a buyer's own quality-control step should still verify on arrival — a verified lot's listed evidence is a strong starting picture, not a substitute for a buyer's own incoming inspection.
Processing method: shapes flavor, not compliance
Processing method — washed, natural, honey, or a regional variant — is one of the most direct levers on a coffee's final flavor profile, and it's a field worth reading before assuming a cupping score alone tells a buyer what a lot will taste like. Washed processing tends to produce a cleaner, more acid-forward cup with the origin's varietal character more exposed. Natural processing ferments the coffee inside the whole cherry, generally producing heavier body and more fruit-forward, sometimes wine-like character. Honey processes sit between the two, varying by how much mucilage is left on the parchment during drying.
None of this is a compliance or legality signal. Processing method is entirely a quality and flavor-profile field. It belongs in the same conversation as the cupping score — it does not belong in the same conversation as the EUDR tier.
Certifications: a specific standard's audit, not a blanket seal
A certification attached to a lot — organic, Rainforest Alliance, Fair Trade, or similar — reflects a specific standard body's own audit against its own criteria. Organic certification speaks to input and cultivation practices. Rainforest Alliance speaks to a broader set of environmental and social criteria under its own standard. Fair Trade speaks to pricing floors and cooperative structures. Each is real, each is independently administered by the certifying body, and each covers a defined scope — none of them is a general-purpose quality or compliance stamp that substitutes for the others.
The overlap with EUDR is partial at best. A certification's audit trail can sometimes contribute supporting documentation to a due-diligence file, but no consumer-facing certification currently listed on a lot page is itself an EUDR compliance instrument. Treat a certification as evidence of the standard it actually certifies, not as a proxy for deforestation-free status.
EUDR tier: a compliance-and-risk read, not a quality signal
The EUDR tier shown on a verified lot — GOLD or SILVER, or no badge — is computed from the underlying verification batch's recorded compliance status and risk level, not from anything about how the coffee tastes. GOLD reflects a batch recorded as compliant with a low risk level; SILVER reflects partial or in-progress compliance work; no badge means no recorded status yet, which is not itself evidence of a problem.
A GOLD tier is worth a lot to a buyer's own due-diligence statement — it front-loads documented geolocation and risk-assessment evidence. It says nothing about whether the coffee inside that GOLD-tier batch is a delicious cup or a mediocre one. A high cupping score on a lot with no EUDR badge does not make that lot compliant, and a GOLD-tier lot with a modest cupping score is not thereby a quality lot. These are two different pieces of the same buyer decision, evaluated on entirely separate evidence.

A practical sequence for screening a verified lot, rather than fixating on one field:

- 2Check certifications against the specific standard a buyer's own customers or contracts actually require — not as a generic quality stamp.
- 3Read the EUDR tier as a separate question entirely: what compliance evidence does this batch already carry toward a due-diligence statement, independent of how the lot cups.
- 4Treat coarse origin region as geographic and flavor-profile context, not as identifying information — full producer identity stays behind RFQ acceptance by design.
- 5Where an AI-generated trust vouch or fair-price band is shown alongside a lot, read both as labeled outputs — a vouch is an AI-generated summary of the evidence on file (produced using Claude, from Anthropic), and a price band is an AI-generated estimate, not a market quote or a guarantee — useful context, not a verified fact on their own.
That sequence keeps each signal doing the job it's actually built for, instead of one strong number quietly absorbing the weight of a decision that needs several.

None of the evidence on a verified lot page replaces a buyer's own incoming quality control, a buyer's own due-diligence statement as the EU-market operator, or a buyer's own read of a sample before committing to volume.
